Simple Puff Pastry Sausage Rolls

Let’s roll our sleeves and start making this easy-to-follow recipe for homemade sausage rolls. Flaky puff pastry encases a flavorful blend of seasoned sausage, creating a perfect handheld treat for any occasion.
As a twist, we’ll add a creamy feta cheese mix to elevate the taste with a tangy accent.

What you need for Simple Puff Pastry Sausage Rolls:

  • 3 thin sausages (6 if double the recipe)
  • 1 cup feta cheese (Bulgarian)
  • ⅓ cup heavy cream
  • 2 Tb freshly chopped parsley
  • 2 puff pastry sheets (9 in x 9 in)
  • ¼ cup Dijon mustard
  • one egg for egg wash

Brown the sausage lightly in a pan. You don’t need much; just give them some color 3-5 min. Put them on a plate and cover with foil to keep warm.
Meanwhile, mash the feta in a bowl until you get an even crumb. Add the heavy cream and mix until you get a nice creamy texture ready to be piped. Add the chopped parsley and keep mixing.
Place the feta mix into a piping bag with a thick ½ inch diameter tip. Place the pastry sheet on wax paper, brush with the Dijon mustard, and cut it in thirds (3-inch strips).
Pipe the feta along the middle of each strip. Place a sausage on top of the feta chees and lightly press down. Use one sausage per each 3-inch wide puff pastry strip.
Beat one egg for an egg wash.
Start folding the dough over the sausage lengthwise. Brush the top with the eggwash, then fold the other side, overlapping the edges. Press lightly to seal. Repeat the same folding process for each strip.
Cut each sausage roll log into 1.5 in (4 cm) pieces and place them on a parchment paper lined sheet.
Lightly press marks with a fork on each roll, then brush with the egg wash. Sprinkle toasted sesame seeds on top, then place them in a 400 F (200 C) oven for 30-40 minutes or until golden, brown, and delicious.
Serve while hot!
