Roasted Peppers Pasta

Don’t you love those days when you can freely fire up your oven, cooking in sub-zero, Polar Vortex days as we have this wonderful winter in Chicago. There’s something comforting about that. Looks like the North Pole decided to move down here and we are uber-thrilled. Or NOT.
Every now and then we would have enough of this, pack up and head to Florida for a month or so. At least we break this winter in two. That’s when I tried this roasted peppers pasta, inspired from Jamie Oliver’s Cook with Jamie

I twisted this recipe adding mushroom and asparagus, which both can be easily left out if you aren’t a fan of those. Same with Blue Cheese which understandably, isn’t everyone’s friend. This dish includes plenty assertive ingredients (anchovies, garlic, blue cheese) to have a glorious outcome.

Dijon Mustard Crusted Chicken with POM Sauce

There’s nothing like an arugula and tomato salad that was grown in your backyard – our plot in my case. The nutty arugula flavor combines sublimely with the acidity of the tomato. No comparison with store bought produce. The porcini risotto was my first try to stick with the original recipe. But for some reason I had to go 8 minutes over the religious 14 minutes of cooking the risotto after the first stock scoop. Nevertheless it turned out wicked!

I decided to take on NPR’s How Low Can You Go – $10 Meals challenge and post here a recipe that will bring you and your family through (at least for a day) the recession!

The recipe I will post is nothing new for me,  my Grandma would make it once a week, and almost everyone in East Europe eats it. And get this! If Potato Pasta brought many people through a Communist-wrecked economy in Romania, it will bring you through for sure here in the West!
